Julian,

You are indeed correct on the stainless steels. I have to deal with that
everyday in the downhole oil tools business. The yield strength of stainless
will also catch you out if you don't watch it. Typically, they are very
soft, easy to strip, etc.
We typically work with 80ksi and 110ksi 13Cr and 4140 stuff in addition to
Inconel 718.
And my personal favorite MP35N; 180ksi, but expensive. Immune to almost any
corrosion and acid. Stainless steel can be down in the 30's very easily
