Another option is to use a Veglia oil temperature gauge that comes with a matching Italian sender and is more accurate than the stock setup.

If you can't find a new gauge, an interesting alternative would be to send
it to North Hollywood Speedo & Clock and have them put VDO workings in it.
With the matching VDO temp sending unit, you'd have a very accurate temp
gauge and it would look 100% OEM. Wouldn't cost much more than a new Veglia
gauge either.
