It looks like you have room to run a steel bracket. 
 
Those hats look like standard Pantera hats built by Wilwood. 
 
If you want to switch to steel brackets let me know. I would be happy to
assist you.

I suppose you can get away with most anything, by using a rotor hat with the
appropriate offset.  A thicker bracket would space the caliper inboard, and
the rotor hat would have to have different dimensions to maintain the disc
in the center of the caliper.
