IMHO, Nothing wrong with 200.  People get paranoid about temps in a Pantera due to its reputation for overheating.  I believe that many Pantera owners operate their engine's too cool. We boast of our engines running at 185 on the highway; yet, that is less than ideal. 200 to 210 is a good temp range that allows oil to get closer to its ideal 225.  Some argue that a fan coming on at 180 allows the cooling system to get on top of keeping temps lower - I really do not buy that.

Anyway, your temp sensor acts as a ground for your fan circuit when the radiator coolant hits 200 and allows the electrons to flow and fans to run.  Actually, SO Bill has a tech report at Pantera Place that charts the accuracy, or better put inaccuracy, of Veglia temp gauges with various senders.  I suspect that you actually have a 195 thermal switch and the inaccuracy of your gauge has you believing it is 200.  If that be so, your engine coolant is actually cooler that you are informed by the temp gauge.  

Id recommend that you run a 10 or 12 gauge wire, depending on the amps of your fans, from the thermal switch to a switch on your dash.  The dash switch is subsequently grounded, in the closed position, using 12 or 10 gauge wire to the ground stud under the dash.  It is better to utilize a central ground on the vehicle. If you use an existing switch on the center console, remove the daisy chained ground wire from that switch (if it be attached), as it is to light to carry the amps of the two fans, and use the heavier wire previously mentioned ground wire.  12G carries 41 amps and 10G carries 55amps.  12G should be adequate for many 2 fan loads.  SPAL fans are higher amperage and you might consider 10G. 

This will allow your thermal switch to still contribute to the cooling exercise, when you are distracted and not watching gauges while driving in the city, and allow you to override the thermal switch and turn the fans on at will.
