[DeTomaso] Thermostat Question

My mechanic is installing a third switch-operated fan to the rear of the radiator.  This is something I can switch on when stuck in traffic, or if I notice the temp rising.  Not sure if a thermostat makes that much difference in temp.  Does one open wider than another?
