More data points:

 

My Pantera is a 400, Dart block, A3 heads, and a large hydraulic roller.  It has a Fidanza radiator and dual SPAL fans.  No vents in the hood.  The fans come on when I’m idling, but once I’m going 30mph or so, they turn off.

 

When I had a 351C with A3 heads in Houston, my fans were broken and I didn’t know it.  I had driven for years with no fans.  It took an hour of stop/go traffic in a 100 degree heat wave for it to overheat.

 

My Cobra is a 482 FE with a large hydraulic roller.  It has an aluminum radiator, and 3 fans.  It only needs the sucker fan.  The 2 pushers are for looks.  They only come on when I’ve been idling, and go off at 30mph or so.

 

My Viper is a 488 with a blower.  Fans only come on when going under 30mph.

 

When I tracked the Viper last, it ran hot.  I was pushing it pretty hard, though.

I had a pretty modified 351 and now have a 408 as well... no overheating in traffic with 2 fans operated by a thermostat, and the car is in Spain. Just one more data point...

   Here's a weird one...
   My fan relay melted, and I believe the problem was a dead spot in the
   very old SPAL fans.  I bought brand new fans and relays.  All good now.
   And, mine only come on when the engine is hot.  I totally agree with
   Mike.  If you have to run your fans at 35mph+, you have other problems.
   Btw - I'm in the Miami area - which gets pretty hot in the summer.

        Here's a weird one...
        My fan relay melted, and I believe the problem was a dead spot in
     the
        very old SPAL fans.  I bought brand new fans and relays.  All
     good now.
        And, mine only come on when the engine is hot.  I totally agree
     with
        Mike.  If you have to run your fans at 35mph+, you have other
     problems.
        Btw - I'm in the Miami area - which gets pretty hot in the
     summer.
