Looks like they are using a Benzomatic torch. Maybe getting it hot enough to melt the slug guarantees that you will get a good solder, and the vertical position prevents or at least reduces any solder wicking into the cable?

Proper Soldered joints are stronger than the wire and connector they are soldered to. That’s why Ford for years has had very specific procedures for soldering connections in the vehicles. That’s also why we don’t use any crimped connections on the Gas turbines or Generators at GE when we replace INC connectors that have failed due to vibration. The problem with something like a 12v positive cable is getting it hot enough to make a good joint with household soldering irons. I have a nice solder torch I use at the house that gets hot enough to weld with.

Just the solder which is attached to the inside surface of the lug.
Solder is SOFT! Over time, vibration etc., will loosen the connection.
Nothing wrong with soldering a crimped connection but really
unnecessary.
Done properly crimping is the way to go.

I have some fairly heavy and nice looking battery cable ends. I
think
they can be crimped, but I'd like to just solder them. Any reason to
not solder onto the cables?
