Or more accurately, use a standard non-351C Ford thermostat. 

But the real answer is not to use a blockoff plate and instead use the standard 351C bypass plate. The cooling system was designed by people far smarter than we are about such things, and works exceptionally well when it’s working as designed. Amateur significant engineering modifications can potentially improve things, but in this particular case it has zero advantages and some significant drawbacks....
