Matt - It's not just you. I'm not 100% sure on the details but gmail
displays the digest format in raw text. Some list members use
smart email tools that allow formatting text that under the covers
essentially duplicates the contents of the email. When the list
members just add a couple lines of text to the top of a long post
that gets duplicated things get out of control quick. Multiple
responses in one chain (duplicated) turns into a real pain in the
ass.

Anyone that is still reading they can see this post as an example:

The most recent three responses are 2-3 lines each, but each of those
responses are really almost 2000 lines each. Back to back to back
that turns into a mess in the digest. The 8 posts sent on July 6
(July 7 Digest) are almost 20,000 lines. Uggh!

What can we do about it? Probably nothing. If responders just add
text without editing what they are responding to then we just get
stuck with the clutter. Depending on the mail client it's not obvious
what is being sent. No one is going to edit dozens or hundreds of
lines out of an included email on a phone.
