For all the categories, I'd start with a hierarchical organization and add the ability to denote stock and modified.  A simple checkbox for "Modified" in each area could allow owners to enter the car's original configuration as well as the current configuration, such as in the example of a car that has since been winged and flared and listed as a Gr4. Just a thought
