Tom,

That picture looks like your block's normal brass thermostat bypass
restrictor plate has been replaced with a sealed version.  This meand you
can safely use a redily available 351 Windsor thermostat.  The downside is
that you'll have longer warm-up times vs using a stock restrictor plate with
a true 351C thermostat.

I believe stat should have thimble on bottom?
