[DeTomaso] Overheating

Howdy All, Still working on trying to get my new stroker motor to run correctly.  
Car will run really strong until the motor heats up.  Usually takes about 15min
then it starts losing power and wont idle.  It will run but not very well and backfires
if I get on the gas.  I noticed my temp gauge was moving between 180-200 degrees. 
Seems like it just moves from one position to the other suddenly so I checked the
connection to the temp sender (in the block) and it looks okay.  I touched the carb 
bowls and burned my finger it was so hot.  My oil temp gauge
is reading low 210 and max 240 degrees.  I am not blowing any water or steam out of the 
overflow tube and the pressure tank is full of coolant.  Non pressure tank is half full.
Maybe bad temp sender/gauge and or a bad thermostat causing the engine to
heat up so much?  Maybe an air bubble in the system?  Thanks, Sean
