Pirelli P Zero or Yoko AVSi

The Hoosier R6 and Toyo RA1/R888 also work very well.

I'm not questioning anyone's intentions with their own car. Everyone should enjoy it in whatever manner they see fit.

However, I wouldn't consider an S rated tire for any spirited driving. One can hit 120mph in such a short amount of space.

What about a chance encounter with a Countach or Bora on the open road? 

Option A - "I'd love to engage and use my 500bhp engine but my tires might fly apart at 112mph"?

Option B - Floor it 

Regardless of whether you have any intention of driving at higher speeds, everything (cornering/braking/traction) is better with a high performance tire installed.

Pray tell what street legal 15" tire you are running at 160 mph? Personally I wouldn't be doing 160 on a 15" stock Campy under any circumstances.
 
Someone previously questioned the street legality and longevity of the Hoosier, Michelin TB options presented, an S rated (112 mph) tire may be enough for some folks who street drive their Pantera within national speed limits.
