Talk to Dennis Quella about his various McLeod offerings.   I think a 
standard clutch (either three-finger or diaphragm, I prefer the latter) with an 
upgraded disc will easily handle your needs, especially since you won't be 
driving it hard (that is, this isn't a race car that lives its whole life on a 
track).   Dennis offers a much more expensive twin-disc RST setup, but it 
is probably unnecessary overkill for your application.
