You might want to read a little more carefully. I never said anything about "acceptable." Accepatablilty has nothing to do with my question.
There are two motors in the drive w/ aluminum heads and neither ever exhibits oil temps higher than water temps. This is in direct opposition to your statements, and led me to ask the questions. I thought maybe you had made a typing error.

Because my engine was originally from a NASCAR series Craftsman truck and makes 600 hp. 180 water and 210 - 220 oil is more than acceptable. In race tune, it would have 245 degree oil and water at 250-275 degrees.
Plus I have AL heads which disapates heat better than cast iron, which relieves the water from cooling even hotter heads, thus the disparity in the water and oil temps.
If I had a stock 330hp engine with cast iron heads, i would guess the temps would be more equal.

Does this seem correct? Mine is located the same but my oil temps are equal to or LOWER than water temps. This is also my experience with other vehicles and my understanding of the relationship between oil and water temps.
I don't understand how an oil cooler works great but temps are higher than water. Can someone help me understand this?
