According to a loss specialist I emailed, if this happened today, if the
insurance company paid you for the stolen car, and it was recovered, you
would have the option of keeping it as long as you paid them back for
whatever they paid you, but you have no obligation to buy it back.

You could also then file a claim for any damage done to it while it was
stolen if you decide to keep it, after you buy it back.
