Looks like you are well ahead of me on this one.   I was feeling too cheap for the LM-1 and found a kit for a O2 sensor board from a German electronics newsletter.  I am guessing the author works at Bosch or one of the car companies.  In reality,  I tend to dream up many more projects than I actually get to, so I will probably just buy a data logger for the tuning.  
 
I've always felt that carbs were intimidating to folks mostly because all the work is being done open loop.   Occasionally you find a seasoned expert who had a few closed loop tricks, like reading plugs and knowing what changing emulsion tubes will feel like in the seat of the pants, but I expect many carb issues could be solved by putting on a 02 sensor and going closed loop.

Dave, I am a big fan of the O2. I have worked with the O2 on a couple
engines. I have an Innovative LM-1 which I have tuned a number of engines
including my tractor engine.

With the MGB I moved to an in dash gauge. It did not really fit the gauge
cluster so I hid it behind a radio delete plate with a vacuum gauge:

I am thinking of doing something similar in the Pantera.

With the exhaust system I built for the Pantera I have individual runners
which extend all the way to the back of the car so I put in bungs on each
runner; which is good because each Weber is divided by left side and right
side. With 4 Weber's you basically have 8 carbs.

If you look toward the bottom of the photo you can see the ungs on the
right side and one has an Oxygen sensor plugged in:
