Gary,
 
IMHO, stainless is the most  durable. Stainless is more expensive, more 
difficult to work, and  heavier. Aluminum is the less expensive, easier to 
work, and  lighter.
 
You should allocate grinding wheels and discs  for use on stainless only. 
If you use the wheels/discs on regular steel and  later on stainless, the 
places where you grind will eventually develop tiny  rust spots because 
particles of normal steel will be transferred to the  stainless during grinding.
 
If I were building a tank, I would use aluminum.
