[DeTomaso] stored-for-30-years Pantera advice, needed

It certainly won't hurt anything to simply change out the oil in the ZF and
see what happens ( I'd probably fill it and drive around until it gets hot
and then,  drain it into a light colored pan and look for water, metal
filings, rust, dirt, etc.) Then fill it up with new and see what happens,
chances are it will leak, all the seals above the stagnant fluid level have
probably dried out and cracked. Worst case, you're going to trash bearings,
and overheat parts and cause damage that doesn't exist now.
If I were doing this and I were restoring everything else, I wouldn't take
the chance of having to do it all twice, way too much work, expense and
opportunity for additional damage to paint, etc.
