IMO yes the sensors should trigger the fans through a relay.

Should I just break the relay coil circuit? I take it that the load of the fans is too high for the sensors (~10a each)?

Go here to Wilkinson's catalog, he offers the originals and afternmarket hex screw in type. The aftermarket require a screw adapter to be brazed on to the radiator, although you can likely fabricate a piece to replace the oem triangular mount if all your studs are still okay. Personally I see no reason to have the two fans controlled by independent sensors at different temps, so I have them both come on with one sensor.
