I would anticipate that the temperature on the surface of the block is NOT
the same as the temperature of the water--which is what you're measuring.
You should fully heat up the car so that the temp stabilizes, and then
shoot the back side of the radiator, near where the water enters it (as opposed
to where the water return to the engine, since it has been cooled by the
radiator by then).
I suspect your modification has caused the gauge to read artificially
low....
