If I was to try anything I'd try a water temp sender for a Veglia
instrument. IIRC they have a thread that fits the port next to the fuel pump
boss (where I monitor my oil temp). If it fits Erik's oil pan is a different
matter...

Right you are.   Finding a matching sender is like finding a needle in a
haystack.   I helped a guy in Europe who looked for one for a year; we
finally
found one at Larry Stock's shop.

Call all the Pantera vendors and see what you can come up with, then spread
your net further, calling Ferrari, Alfa etc. parts sources.
