That is for the thermostat that cycles the compressor clutch, and I 
believe you need it.

I guess you can replace the thermostat with a manual switch, but you 
risk having the evaporator freeze up.

I also strongly urge you to check that the low pressure cut-out switch 
on the drier filter besides the condensor is a dual switch, that also 
cuts out in case of too high pressure. The stock switch only cuts out 
for low pressure, and my AC dumped most of its charge inside the cabin 
on the autobahn during rain when it ran hard and the pressure apparently 
became too high.
