I have had my 180's ceramic coated several times
They will turn dull but only after extended times of
high speed runs.. the Siverstate being 90 miles and
38 minutes took the shine right off...20 minute runs
on the Track seem to be ok
 
I spent some time with a ceramic coater out of the central valley
and he stated Black seems to hold up better but the
best is the dull silver color that most headers were painted
back in the day...
 
Not sure about heat on the deck.. I have a shield but it
does not show any sign of heat hitting it... but it is SS
