Nice job Will...the 3-way cut&weld is a quick/inexpensive cheap alternative if 
you don't need to gain much head room....also bolted seats directly to floor.

I removed my aluminum risers when I bought the car.  I also cut a slot in
the carpet so the adjusters could sit flush on the floor pan.  It was enough
to allow me to both adjust the seat and ride w/out my head hitting the
headliner.

I later bought a seat with side bolsters.  I bolted it directly to the floor
pan w/out the rails.  It was still 1-2" higher than the stock seats.

When my car was being painted, I had the painter drop the floor pans - both
front and back.  He dropped the entire pan about 2-3".  He cut the
crossmember, but he welded a new one.  The crossmember is only there to
support the seat.  I wanted him to do it this way so there wouldn't be a
dramatic rake - leaning back.

I haven't measured how far they were dropped, but I tried the seats with the
rails (Corbeau LG-1), and they're perfect.  My head is about 1" below the
headliner, and I can adjust the seat.

>From the sides, you can see the drop.  It looks nearly identical to the pic
that Dan Jones posted.

BTW, he called the vendors to ask about their pans.  He's pretty good with
sheet metal.  It was easier/cheaper for him to make the pans himself.

Sorta makes you wonder how many could have simply removed the seat rails to
get the drop they needed without cutting the pans.

The simplest way is, do your seats adjust position fore and aft? If so, the
pans are likely not dropped. Most dropped-pan setups cut the floor under the
seat to make a metal pocket, dropping them 1-2" while not cutting the
stamped crossmembers in the floor. That effectively prevents the seat from
travelling back & forth. Strangely, many cars with dropped pans and thus no
fore and aft adjustment, still keep the adjustment rails which RAISE the
seats about 1" above the floor. FWIW- J DeRyke
