Installing an oil temp gauge is relatively easy providing you have the sender bung in your oil pan. Do you have an aftermarket oil pan (Aviaid or Armando) and if so does it have a temp bung? Aviaid at least started adding them by request a while ago, so having an aftermarket pan is no longer guarantee you have the bung.
 
Later (9000 series) cars had an extra two gauges (oil temp and clock) and placed a gauge either side of the speedo and tach, so if you want to be in keeping then that might be a good place to put the oil temp. If you don't want to cut the dash then Hall used to offer a two gauge pod and padded arm rest that sits over the tray at the rear of the center console like this........

A/F ratio is good for tuning but IMO all you really need is a bung in each header to connect a wide band sensor to during tuning exercises. Fuel pressure is most easily monitored via a mechanical gauge mounted near the carb that is oreinted to be visible in your rear view mirror or by turning your head. Many people do similar with a mechanical oil pressure gauge as the stock Veglia unit can be unreliable. As for any other vitals monitoring, the only thing I would add is ZF oil temp, but then only required if you track or run your car hard for extended periods IMO.
