Matt,
The underdash part of the HVAC works fine, requires no engineering on your
part to get it working, and they come up on ebay pretty regularly. Just
make sure you get the one for your model year. The only component you may
want to upgrade is the fan motor as was recently discussed here on the forum.
The lever controls are old fashioned but they do work, a little lube helps,
and it keeps the original look of the car's interior.
Definitely spring for new hoses, compressor and drier. It's important to
thoroughly flush out the old oil in everything else before going to 134a
freon.
Front or back condenser is your choice. The stock location works fine, it
just depends on how much engineering you want to do. Definitely spring for
a modern parallel flow condenser. If you decide to keep the condenser in
back, there are new dual fan and shroud units that are more effective.
