I've not been following this thread so perhaps you have some other
modification which makes this not a concern but for 351C's with the
factory cooling system, simply removing the thermostat will cause
the engine to run hotter, not cooler:

Read the section on "Special Precautions Required to Remove Thermostat
from 351C Engines"

Also, the 192 degree thermostat was chosen for good reason:

Cylinder wall wear rapidly increases with cooler temperatures.
