Agreed 220 is a good place to be and I monitor my oil temps far more closely than my water temperature. I do find a fairly constant 30F differential oil to water temperature under normal driving conditions.

I believe that studies show optimum power to occur when oil is around 220 degrees. I am certain that this varies from engine to engine and oil to oil; however, it is in the ballpark. I suggest that running 160 or even 180 degree thermostats is to cool. Highway driving with ample coolant and airflow will draw fluid temps down to that level.
