Boyd,
If the over-all tire diameter is fine then offset becomes the next critical factor.
Since your car does not have flares you have to calculate this very carefully.
Then there are aesthetics.
You will see a lot more through the wheel spokes, some things may not look good but can be enhanced, painted, etc. More spokes masks this visual problem.
One more thing that could be a problem for some, maybe not you, which is fine, is a 2009 style wheel and tire on a 1974 car.
Aesthetically there is some confusion resulting if you are strongly into how the car looks.
A larger diameter higher aspect ratio tire, with a slightly larger diameter wheel, like 17 or 18 inch might look better to some.
30 aspect ratio tires could offer functional problems as wheel travel wants to be greater as aspect ratio goes down.
A 1974 car has a visually enhanced expectation by most of having more rubber, like 45 or 50 series.
This is going to be a big expense, why not have your tire/wheel supplier get one of each and try one.
The big problem I always have is getting a good match front and rear, wheel and tire size as well as speed rating.
Because of the front to rear tire and wheel size on a Pantera or Mangusta picking tire and wheel size is difficult with available products in the market.
Sorry to make it so complex.

All the best, Dick Ruzzin.
