It depends on your application (street, track, drag strip) and your
desired tradeoffs (grip vs. wear vs. sidewall stiffness / turn-in vs.
mileage).

...but they are for 7's and 8's instead of for 8's and 10's (if that
makes any difference)

No, that's the MAX pressure, which is substantially higher than the
recommended pressure.
