The availablity of headers will depend on the exact heads you use.  They are likely to end up being custom, especially if you want 180s.

Indeed, I am starting to entertain that angle of thinking myself. The Windsor
would be lighter, smaller, cheaper in all Al form. Also, the delicious T304
stainless 180s that I'd like to use would be more readily available and
cheaper.
 
I do like the fact that the C was original to most and also raced by the
factory and at Le Mans. But, the W is not incorrect.
 
What a nutty decision. 

What about GM LS V8? Just kidding...

I would stuff anything made by ford/BMW/or a hemi in a Pantera because of my
weird philosophy of that if the car builder installed one in any of his cars
he made it is ok to install it in your car...weird maybe. I remember reading
a road and track with an article about The European Pantera GTS. It stated
that the car came with a Windsor because the supply of clevelands dried up.

Pantera Cleveland/Windsor/5 liter/Hemi (Hemi after ford axed the program and
Iacocca tried to see if he could sell the Pantera under the Chrysler badge.
He had a Hemi installed.

Guara (1st car produced) Bimmer V8. A bimmer v8 uncorked just sounds too
good.
