[DeTomaso] Tire Sidewall height vrs high speed (heat) durability

So I'm looking for the tallest rear tires I can find to keep the rams down and I'm seeing how the 55's are almost an inch taller (and perhaps 80 rpm's lower) than the 35's, but they are also cheaper. Hmmm, must not be in high demand with the big buck boys.
I'm also guessing that more rubber means more expansion at high speed and therefore less security?
