I think there is lift specified for spring bind, but that doesn't take into account the lobe shape, lifter weight, max RPM, etc. so you could float a valve into a piston.
   
  I agree with Curt, pick the best cam for your goals and use the springs the cam grinder recommends, and replace the old valves.
