I set my valves to about 0.014 cold, which becomes about 0.022 hot - which
is the spec on the card. Iron heads would grow less.
The Porsche shop may have used a similar formula to get the cold setting.
The growth factor wouldn't apply to overhead cam engines, but that doesn't
mean the mechanics didn't allow for it, though.

My titanium valves sunk quite a bit into the seats of my aussie heads
before I noticed and had hard seats installed.
I don't think you have anything to worry about, unless you had to adjust
the lash substantially. It was quite a while since you had the valves
adjusted, and any wear on either the the seat or the valve head will
result in a decreased lash.
