Sounds like you have a properly working 160 degree thermostat and an 
effective cooling system.   You might consider switching to a 180-degree thermostat 
though, as it's arguably better to keep the motor in the 180-200 range.

You can buy a cheaper 351C thermostat at any auto parts store; just tell the 
parts counter guy you have a 1972 Mustang with a 351C.   Do NOT let him sell 
you a 351W thermstat as this will fit perfectly, but not work properly and lead 
to instant and impossible-to-solve overheating.

But unless you are just dying to tear your cooling system apart, I'd be 
inclined to leave it alone for now and tend to it at some future point, when it's 
convenient.
