Realistic suggestions:
 
Tracktime - go carts, shopping carts, maybe even Panteras.  it IS
afterall, the POCA convention (maybe only in my tiny little mind?) so it
needs to have Pantera/car stuff.
 
Waterslide for all the kids that you pack into the Pantera.
 
Shopping for those who shop.
 
Affordable.
 
Scheduled so folks can participate. (iff the kids are coming shouldn't
school be over?)
 
Not in a #@$%# oven.
 
Find someone to organize, market and put the event on.  You didn't
forget this small piece to the puzzle, did you?
 
and finally, you won't please anyone but folks will come.  Let those who
whine the loudest organize the next one.
